This past Sunday, my friend and I went to for coffee at one of our favourite coffee shops and then headed up to check out the local farmers market in White Rock. It was such a fun way to spend the day with one of my besties! There is always so many vendors to check out, this weekend I picked up a 5lb box of wild organic blueberries for $15!!

I started to make a list of things I wanted to do with this big box, obviously freeze a big batch for smoothies. Keep some fresh to snack on for the week-there is nothing better, am I right? However, I still had some extra. Looking through my fridge, I found some other ingredients which I needed to use up…so watermelon, blueberries and mint salad! It was perfect for a warm summer day. I topped my bowl with feta cheese.

INGREDIENTS

6 cups cubed watermelon
2 cups fresh blueberries
2 tablespoons fresh mint

OPTIONS

Try topping with crumbled feta cheese
Fresh lemon juice/lime juice
Organic unpasteurized honey

DIRECTIONS

Add cubed watermelon, blueberries, and mint to a large bowl. Try any or all of the suggested toppings with this refreshing salad.
