Fall has arrived and it’s the season for all things pumpkin! What better way to celebrate the arrival of fall than to drink your favourite fall-themed beverages?
Some of us at Brio love a PSL, but we know how much junk is in the coffee shop versions. Laura and Kyra whipped up a delicious version that is free of artificial sweeteners and flavours and just as tasty as the local coffee shop’s version.
1 cup almond or coconut milk (canned coconut milk will result in a much creamier texture!)
1 cup hot brewed coffee
2 tablespoons pumpkin puree (not pumpkin pie filling)
2 tablespoons pure maple syrup or honey
½ teaspoon pumpkin pie spice – or more if you like it stronger
INSTRUCTIONS
Combine all ingredients in a medium sized pot over medium-low heat. Using an immersion blender, blend everything until well-combined and frothy. Warm until desired temperature is reached, pour, and enjoy!
You can also combine all ingredients in a high-powered blender like a Vitamix or Blendtec, and blend until warmed. [/tagline_box]
