Ingredients

6 pastured eggs, yolks and whites separated

6-8 slices of nitrite free bacon

½ cup full-fat coconut milk

1 handful of spinach

1-2 cloves garlic, minced

1 tbsp parsley

1 tsp oregano

½ tsp paprika

salt and pepper, to taste

¼ cup parmesan cheese (optional)

Directions

Preheat oven to 350 and grease a 9” pie plate. In large bowl, whip egg whites until fluffy and almost stiff. In separate bowl mix yolks, sausage, milk, garlic, herbs, and spices until thoroughly combined.

With a spatula, carefully fold in egg whites until combined. Pour into pie dish and sprinkle with cheese, if using.

Bake for 35 minutes, or until golden brown on top.[/tagline_box]
