Spring is the long awaited time of transitioning from cold winter to warm spring. The days are getting longer and warmer! We are gardening, flowers are blooming, local produce is booming. Spring brings a sense of renewal and new life all around. In Traditional Chinese Medicine they say spring is the time of the liver. This means it’s our opportunity to make dietary choices to support the liver, and what does the liver love? Sour and bitter foods!

Our liver loving salad below will stimulate your liver function and provide you with lots of energy.

3 cups of leafy greens (romaine, mixed greens..whichever you prefer!)
1 cup of arugula
2 handfuls of cherry tomatoes
1 handful of liver loving chopped parsley or cilantro
1/2 cucumber, chopped
1 avocado, chopped

DRESSING

1/3 cup extra virgin-olive oil
1 tbsp. Braggs apple cider vinegar
1 tbsp. dijon mustard
1 tbsp fresh lemon juice
1 clove of minced garlic

DIRECTIONS

Combine all vegetables in a large salad bowl. Combine all dressing ingredients in a small bowl and whisk well until combined. Serve salad into individual bowls, or one large one, and pour dressing on top.[/tagline_box]
