With our fast pace lifestyles, it’s only becoming more apparent the importance of meal planning and organization. I love a good easy to prepare snack! I made these this week and found them convenient for snacking or an easy breakfast option when time is limited.

Ingredients
- 1/2 cup creamy seed of nut butter of choice (ex. peanut butter/almond butter/pumpkin seed butter)
- 1/3 cup organic maple syrup
- 1 tsp vanilla extract
- 1 cup old-fashioned oats (I used Bob’s Red Mill)
- 2/3 cup unsweetened shredded coconut
- ¼ cup ground golden flaxseed meal (I used Bob’s Red Mill)
- ¼ cup chia seeds
- 6 Tbsp dark chocolate chips (I LOVE the Enjoy Life Mini Chips)
*All of these ingredients can be found at most grocery stores, I purchased them in the Natural Foods Aisle at my local Superstore.
Instructions
- In a mixing bowl, combine butter of choice (ex. Almond or peanut butter), maple syrup and vanilla extract.
- Add remaining ingredients and stir until evenly coated.
- Transfer mixture to refrigerator or freezer and chill until mixture has firmed up a bit, about 30 minutes.
- Remove from refrigerator and shape into 1-inch balls.
- Store in refrigerator in an airtight container for up to one week (if they last that long ;) )
