Are you looking to make something delicious for the special woman in your life this Mother’s Day? These crepe’s are sure to please, prepare them to be sweet or savoury. We suggest topping them either fresh berries, mint, berry compote or cinnamon.

1 c.gluten free flour
1 tbsp. organic sugar
1/4 tsp. himalayan salt
2 large free range eggs
1 1/2 c. coconut milk
1 tbsp. organic butter
Fresh fruit, for serving
Powdered sugar, for serving
DIRECTIONS
In a large mixing bowl, whisk together flour, sugar, and salt. Beat in eggs one at a time, followed by the coconut milk. Let batter stand at room temperature until bubbly on top, 15 to 20 minutes.
In a small skillet over medium heat, melt butter and coat pan. About 1/4 cup of batter at a time, drop batter evenly onto pan.
Cook 2 minutes, then flip and cook 1 minute more; repeat with remaining batter. Serve crêpes warm toppings of your choice: powdered sugar, fresh fruit, fruit compote, mint or cinnamon.
