It’s Superbowl 51 this Sunday February 5th, and the battling teams are New England Patriots vs. Atlanta Falcons. I have to admit I don’t get too excited about football but I do enjoy the halftime show (Lady Gaga this year!), and spending time with family and friends.

Running Healthy Living 101 and supporting clients on making healthier choices during social outings is always a hot topic. I thought I would give some healthy ways to cut down on starchy carbs such as chips, swapping with slices of cucumbers. Check out the recipes below for some ideas!

INGREDIENTS
• 1/4 cucumber cucumber
• 1 jalapeno pepper
• 1/4 cup chopped red onion (more or less depending on your taste!)
• 1/2 tsp garlic
• 1/4 cup cilantro
• 1 avocado
• 1 tbsp fresh lime juice
• 1/2 tsp chili powder

DIRECTIONS
1. Dice the cucumber into 1/4-inch pieces, remove the seeds and gills from the jalapeno and finely dice, finely dice the red onion, mince the garlic and chop the cilantro; set all aside.
2. Mash the avocado in a bowl with a fork. Add the lime juice, chili powder, and salt and freshly ground black pepper to taste.
3. Add the cucumber, jalapeno, onion, garlic and cilantro. Ingredients:
• 2 zucchini peeled and chopped
• ½ cup tahini
• 1/3 cup fresh lemon juice
• 1/3 cup extra virgin olive oil
• 3 garlic cloves
• 1 ½ tsp cumin
• Pinch of pink himalayan sea salt and pepper

Directions:
• Add all ingredients into a food processor or blender or a blender and combine until smooth. Enjoy with slices of cucumber, carrot sticks, celery sticks, etc.

INGREDIENTS
• 1 head cauliflower, chopped into bite size piece
• ½ cup brown rice flour
• ½ cup water
• Season with pink himalayan sea salt
• Pinch of granulated garlic powder
• Non-stick spray

HOT SAUCE MIXTURE
• 1 tsp. organic butter/ghee/coconut oil
• ½ cup Frank’s Red Hot sauce

INSTRUCTIONS
1. Preheat oven to 450F.
2. In a small bowl, combine brown rice flour, water, garlic powder and salt. Mix thoroughly with a whisk.
3. Dip cauliflower pieces in the batter until coated evenly, then place on a lightly greased, non-stick baking sheet.
4. Bake for about 10 minutes or until the batter hardens, then flip with a spatula and bake for another 5 minutes.
5. Whisk together Frank’s Red Hot sauce and butter/coconut oil in a small bowl.
6. When the cauliflower is finished, evenly brush each piece with the hot sauce mixture.
7. Bake coated cauliflower for an additional 8-10 minutes, or until cauliflower is crispy, and sauce looks absorbed.
8. Remove from oven.
9. Let cauliflower bites set out for at least 20 minutes before serving.

Serve with salsa or try a herbed tahini dip for the cauliflower buffalo bites.

HERBED TAHINI DIP
• 1 clove of garlic, minced
• 1/4 cup tahini (if you would like to make your own it’s simple, check out this recipe HERE!)
• 2 tablespoons fresh lemon juice
• 2 tablespoons extra virgin olive oil
• 1/4 cup water + more to thin if necessary
• 1 teaspoon honey
• 1/4 cup dill, minced
• 1/2 cup parsley, minced
• salt and pepper to taste
